A Perfect, Productive, Cookie-Filled Day!

So much got done today!

I started my end of year photo book — I print one every year for the grandparents and the kids. I love that my mom kept photo albums for me, and this is my way of making them for the boys.

I did lots of work on the gym’s website and hashed out our holiday schedule.

I took the car in for an oil change.

I hit the grocery store on the way home from work.

I made dinner for the family.

Evan’s lunch is made, the kitchen is clean (can’t say much for the rest of the house), and I even kept my food journal!

Breakfast: Blueberry Avocado Smoothie — Recipe on Instagram.

Lunch #1: The end of my homemade chili I brought to work.

Lunch #2: The Husband brought me Chipotle at work — Salad wtih brown rice, chicken, salsa, and guac.

Dinner: Chicken breast tenderloin panfried in a little coconut oil and a side of broccoli. I skipped the “carb” side because it was Christmas Cookie night!

This is a longstanding family tradition and one of my favorites. The kids love it too. Multiple times Evan spontaneously blurted out, “This is so fun, Mommy!”

Of course I put my own “healthy” twist on the cookies. You can see my original Less-Sugar Sugar Cookie recipe here but I modified it yet again using 100% whole wheat flour (because it was all I had) and coconut oil instead of cream cheese.

The kids loved them! And really enjoyed decorating this year.

They stayed up late, we blasted Christmas music and now have a plate of fun cookies.

Life is good. I’m exhausted. Time for bed.
